Fattis & Monis

INGREDIENTS

  • 500g Fatti’s & Moni’s Macaroni
  • 20ml vegetable oil
  • Cheese Sauce:
    • 50g butter
    • 60ml (30g) flour
    • 700ml milk
    • 500ml (250g) cheddar cheese, grated
  • Filling:
    • ½ red pepper, seeded and cubed
    • ½ green pepper, seeded and cubed
    • 1 onion, roughly chopped
    • 5ml garlic, chopped
    • 5ml dried parsley
    • 15ml (15g) butter
  • Topping:
    • 2 large tomatoes, sliced
    • 250ml (125g) cheddar, grated
    • 2 slices white bread, crumbed
    • 30g butter, melted
    • 5ml dried parsley

METHOD

  1. Cook Fatti’s & Moni’s pasta as per pack instructions. Drain and toss through oil, set aside.
  2. Meanwhile; over a low heat melt the butter and add flour; mix until flour is absorbed. Slowly add the milk and whisk until smooth, add the cheese and season. Set aside.
  3. Grease an ovenproof dish and set aside.
  4. Melt butter, add onion and garlic. When onion is golden, add the peppers and parsley.
  5. Toss the cooked pasta, together with the sauce and onion. Place in ovenproof dish.
  6. Meanwhile, mix the crumbs and butter together with the cheese, parsley and seasoning.
  7. Place sliced tomatoes on top of the pasta. Sprinkle the crumb mixture over the tomatoes; place under the preheated grill, until the cheese has melted and the crumbs are golden.

VARIATIONS

Add 200g crispy, chopped bacon or 240g drained tuna.
